Black Bean Sauce for Pan-fried Salmon

Directions for Sauce

  1. Pick over black beans and wash several times. Put in hot water and soak 1 hour. Drain.
  2. Add more water and simmer 1 1/2 hours. Drain and rinse.
  3. Mash together the beans, garlic, ginger and olive oil.
  4. Cook over medium heat 2 minutes in small sauce pan, stirring often.
  5. Add wine and simmer 2 minutes, stirring often.
  6. Add 4 T. water, oyster sauce, caramel fish sauce, soy sauce, Cajun seasoning and sugar. Simmer 5 minutes, mixing occasionally.
  7. Mix corn starch with 2 T. cold water. Blend into bean sauce and simmer 1 minute.
  8. Add sesame oil, blend, and serve over Pan-fried salmon.
