Caramel Fish Sauce
Cooking time: About 10 minutes
Prep time: About 2 minutes
- 1/3 cup granulated sugar
- 1/3 cup Thai fish sauce
- 2/3 cup water
- Melt sugar in heavy pan. Tilt and swirl pan to mix sugar as it melts.
- When sugar is deep mahogany color, cool.
- Mix in fish sauce and water and stir until all sugar dissolves.
Keeps for months in a capped bottle in refrigerator. Add to soups, stir frys, jambalaya. A substitute for Worcestershire sauce.
