Olive Chicken in Wine Sauce


Cooking time: 1 hour
Prep time: About 10 minutes

Makes: 6 servings





  1. Trim excess skin and fat from chicken. Wash and pat dry with paper towels.

  2. Mix salt, pepper, and thyme in a paper bag. Add two thighs and shake to coat. Repeat.

  3. Heat oil in heavy skillet. Brown chicken about 5 minutes on each side.

  4. Place chicken in casserole. Cover with wine, sherry, onions, olives, and pimentos.
    Cover and bake 45 minutes at 375 deg.F.

  5. Uncover, sprinkle with cheese and bake 5 more minutes.

Good served with Parmesan Polenta.
