Chicken Stew with Lemon

Cooking time: 30 minutes
Prep time: About 10 minutes

Makes: 3 - 4 servings



  1. Mix flour and Cajun seasoning in a bag. Add chicken and shake to coat with flour.
  2. Heat olive oil in skillet. Brown chicken about 5 minutes on one side.
  3. Turn chicken. Add carrots, onions (and optional mushrooms) around chicken and brown another 5 minutes.
  4. Add all other ingredients except for lemon juice and water. Cook covered 10 minutes.
  5. Add lemon juice, wine and water. Cover, and simmer another 10 minutes.
