Caramel Fish Sauce


Cooking time: About 10 minutes
Prep time: About 2 minutes

Makes: 8oz.





  1. Melt sugar in heavy pan. Tilt and swirl pan to mix sugar as it melts.

  2. When sugar is deep mahogany color, cool.

  3. Mix in fish sauce and water and stir until all sugar dissolves.

Keeps for months in a capped bottle in refrigerator. Add to soups, stir frys, jambalaya. A substitute for Worcestershire sauce.
