Stir-fried Chicken with Apple and Peppers


Cooking time: About 10 minutes
Prep time: About 20 minutes

Makes: 2 servings





  1. Mix 1 t. each of soy sauce, wine and olive oil. Marinate chicken in it 1/2 - 1 hour.

  2. Mix 1 t. of soy sauce, corn starch, and COLD chicken broth as a sauce. (If the broth is hot the corn starch will be lumpy.)

  3. Put 1 T. olive oil in hot wok. Add red peppers and apples. Cook 3-4 minutes.

  4. Remove from wok and clean wok.

  5. Reheat wok and add chicken with its marinade. Stir fry 3-4 minutes. Add cooked peppers and apple, and the green onions. Cook one minute.

  6. Add sauce and cook 1 minute, stirring constantly to mix.

  7. Serve over steamed rice.
