Ukrainian Pickled Tomatoes


Prep time: 30 minutes
Pickling time: 3+ days

Makes: 3 cupss




Directions -

  1. Cut tomatoes into 1 inch pieces.
  2. Chop peppers and saute 5 minutes until aromatic.
  3. Add all ingredients and pack into a quart jar.
  4. If needed, add enough brine to cover.
  5. Cover loosely and store at least 3 days in refrigerator.
  6. Tomatoes will keep at least a month.

Serve as an appetizer or with eggs.
