Tuna Rigatoni


Cooking time: 1 hour
Prep time: 10 minutes

Makes: 2 - 3 servings





  1. Heat oil in a soup pan.
  2. Add mushrooms, green peppers and onions and saute 10 minutes
  3. Add herbs, diced tomatoes and tomato sauce. Simmer 40 minutes. Stir occasionally.
  4. Mix in tuna (along with canning water), stir and heat 10 minutes.
  5. Serve over rigatoni and top with grated parmesan cheese.

I like to use whole wheat rigatoni.
