Swiss Burrito


Prep time: About 5 minutes
Cooking time: About 10 minutes

Makes: 2 servings




Directions -

  1. Heat olive oil in a frying pan. Stir-fry onions 5 minutes.
  2. Add potatoes and bacon bits. Stir-fry 5 minutes.
  3. Meanwhile top tortillas with sliced cheese and broil 3 minutes.
  4. Facing the tortilla, pile onion/potato/bacon mix on cheese side, closer to you.
  5. Fold about 1 inch of each side of a tortilla toward the center.
  6. Fold about 1 inch of the bottom edge over the mix. Then roll up to the top to make a burrito.
