Stuffed Jalapenos

Ingredients
- 8 large jalapeno peppers
- 1/2 cup diced onions (or shallots or green onions)
- 4 oz. plain Greek yogurt
- 2 oz. shredded sharp cheddar cheese
- 1/2 t. salt
- 1/4 cup panko (or breadcrumbs)
Directions
- Preheat oven to 400 deg. F.
- Cut peppers in half lengthwise.
- Carefully scrape out all seeds and white ribs.
. . . . . You might want to wear latex gloves for this process.- Mix cheese, yogurt, onions and salt. Divide into 16 portions.
- Stuff each halved pepper with a portion.
- Place peppers in single layer in a baking pan and bake 25 minutes.
- Sprinkle panko on each pepper and broil 5 minutes.
- Serve warm.
