Shrimp Fritters

Ingredients
- 10 oz. Raw shrimp, peeled and deveined
- 2 eggs
- 3 garlic cloves
- 1/4 cup all-purpose flour
- 1/4 cup corn starch
- 1 cup corn, fresh, canned or frozen
- 2 celery stalks, finely chopped
- 1/2 t. salt
- 1/2 cup olive oil
- 1/3 cup plain Greek yogurt
- 1 lemon or lime
- 1/2 cup sliced fresh tomatoes
- 1/2 cup sliced cucumbers
- 1/4 cup chopped cilantro 1/2 bunch (optional )
Directions
- Chop the shrimp into pea-sized pieces.
- In a mixing bowl, beat the eggs, add shrimp and garlic. Stir.
- Add flour, corn starch, salt and several grinds of black pepper and blend until well coated.
- Add chopped celery and corn and blend.
- Heat olive oil in a 12-inch skillet to medium high.
- Place two 1/3 cup scoops of batter into hot oil and flatten fritters into disks. Keep fritters separated.
- Fry about 4 minutes. Turn and fry another 4 minutes.
- Remove fritters, drain oil and place on paper towels. Keep warm.
- Fry remaining batter in same way. (I made a total of 6 fritters).
- Blend lemon juice into yogurt to make a sauce.
- Top fritters with yogurt sauce and serve with sliced tomatoes, cucumbers and chopped cilantro.
