Shahan Ful (Eritrean Fava Bean Stew)

Ingredients
- 2 15 oz. cans of fava beans (with liquid)
- 2 T. extra virgin olive oil
- 12 oz. finely chopped yellow onion (1 large onion)
- 2 cloves garlic, minced
- 1 14 oz. can diced tomatoes (with liquid)
- 1 T. Berbere spice
- 8 rings jalapeno peppers, diced
- 1/2 t. ground cumin
- 1/2 t. salt
- 1/4 cup water
- 2 T. lemon juice (or lime juice)
- 1 bunch of cilantro (finely chopped)
Directions
- Heat olive oil in medium sauce pan.
- Add chopped onion and saute 5 minutes.
- Add minced garlic, jalapeƱo and Berbere spice and cook 1 minute.
- Add diced tomato and cook 2 minutes.
- Add fava beans with their liquid. Heat and mash beans with potato masher.
- Add cumin and salt. Simmer 10 minutes.
- Remove from heat and stir in lemon juice.
- Serve in bowls as a stew, as a dip (thinned with some water) or a breakfast, topped with a fried egg.
You can top with more diced tomatoes, yogurt, crumbled feta, cilantro and olive oil as needed.
