Shahan Ful (Eritrean Fava Bean Stew)

  1. Heat olive oil in medium sauce pan.
  2. Add chopped onion and saute 5 minutes.
  3. Add minced garlic, jalapeƱo and Berbere spice and cook 1 minute.
  4. Add diced tomato and cook 2 minutes.
  5. Add fava beans with their liquid. Heat and mash beans with potato masher.
  6. Add cumin and salt. Simmer 10 minutes.
  7. Remove from heat and stir in lemon juice.
  8. Serve in bowls as a stew, as a dip (thinned with some water) or a breakfast, topped with a fried egg.

You can top with more diced tomatoes, yogurt, crumbled feta, cilantro and olive oil as needed.
