Salmon Couscous with Asparagus


Cooking time: About 20 minutes
Prep time: About 5 minutes

Makes: 2 servings



  1. Steam asparagus for 8 minutes. Drain.
  2. Heat olive oil in sauce pan.
  3. Add flour and stir constantly 5 - 8 minutes until flour is milk chocolate colored.
  4. Add couscous to this roux and stir 3 minutes.
  5. Add boiling water, cover, and turn off the heat. Let rest for 5 minutes.
  6. Stir couscous, add asparagus and canned salmon (broken into chunks). Cover for 5 minutes. Serve.
