Salmon Couscous with Asparagus

- 1 T. mild olive oil
- 1 T. flour
- 6 oz. canned salmon, drained
- 6 oz. asparagus
- 1/2 cup boiling water
- 1/2 cup couscous
Directions
- Steam asparagus for 8 minutes. Drain.
- Heat olive oil in sauce pan.
- Add flour and stir constantly 5 - 8 minutes until flour is milk chocolate colored.
- Add couscous to this roux and stir 3 minutes.
- Add boiling water, cover, and turn off the heat. Let rest for 5 minutes.
- Stir couscous, add asparagus and canned salmon (broken into chunks). Cover for 5 minutes. Serve.
