Pork Chop Casserole

Ingredients
- 1 celery rib, chopped
- 1/2 cup chopped onion
- 2 t. butter
- 3/4 cup water
- 2 cups stuffing mix (or croutons)
- 1 t. olive oil
- 2 pork chops, 6 - 7 oz. each, 1 inch thick
- 1/4 t. salt
- 1/2 apple, sliced. (I also have used sliced lemon)
- 1 T. brown sugar
- 1/4 t. pumpkin pie spice *
Directions
- Take pork chops out of the refrigerator and season both sides with salt. Let rest in kitchen 30 minutes.
- In a pan combine celery, onion, butter and water. Bring to a boil.
- Remove pan from heat and mix in the stuffing.
- Spoon this mixture into the bottom of a greased baking dish (which has a cover).
- Heat olive oil in skillet and brown pork chops 3 minutes per side.
- Pepper the pork chops and place on top of stuffing in the baking dish.
- In a small bowl, combine sliced apple (or lemon), brown sugar and pumpkin pie spice.
- Arrange the slices over the pork chops.
- Cover dish and bake in 350 deg. F oven about 20 minutes (until the internal temperature reaches 145 deg. F.)
- Remove casserole from oven and let rest 5 minutes.
- Serve pork chops resting on a bed of the baked stuffing (or croutons).
I made pumpkin pie spice with 2 parts cinnamon and 1 part each of allspice, nutmeg and clove.
