Pickled Onions


  

Prep time: 10 minutes
Cooking time: several days in refrigerator

Makes: about 3 - 4 cups

  1. When a 24 oz. jar of dill pickles is empty, save the jar and brine.
  2. Quarter the onion through the stem and cut into 1/4 inch thick arcs.
  3. Pack onion in brine, cap and store in refrigerator a few days.
  4. Sprinkle in salads or on hot dogs.
