Pasta al Burro
Cooking time: About 6 - 10 minutes
Prep time: About 5 minutes
Makes: 2 servings
- 1/4 t. salt
- 4 oz. dry pasta (spaghetti, fettuccine, macaroni, etc.)
- 2 T. butter
- 1 oz. finely grated Manchego or Parmesan cheese
- Boil salted water. Cook pasta as per instructions (6 - 10 minutes). Drain but save 1/4 cup pasta water.
- Toss drained but still hot pasta with butter and cheese. Add some pasta water if too sticky.
To this simple recipe you could add chopped basil leaves, cooked peas, cooked zucchini, asparagus, etc.
