Okra - Tomato Stir-Fry


Prep time: About 10 minutes
Cooking time: About 20 min.

Makes: 2 - 3 servings




Directions -

  1. Heat olive oil in a wok and stir-fry onions and thyme 5 minutes.
  2. Remove stems from okra and cut into 1/2 inch rounds.
  3. Add okra and stir-fry 5 minutes.
  4. Add seasoning and canned tomatoes (with liquid) and stir-fry 10 minutes.
  5. Add a little water if the sauce gets too thick.

Based on a 2019 recipe from San Francisco Chronicle. Serve over steamed rice.
