Kale Rotini


Prep time: About 5 minutes
Cooking time: About 15 minutes

Makes: 2 servings




Directions -

  1. Heat 4 cups water in a 2-quart pan, add rotini and boil partly covered 10 - 12 minutes. Drain.
  2. Meanwhile, heat oil in skillet, add onions and brown 5 minutes until crispy.
  3. Add chopped kale and saute 2 minutes. Add tomatoes and saute 3 minutes.
  4. Stir in cheese and heat 2 minutes.
  5. Mix in the cooked rotini and serve. Drizzle with extra olive oil if desired.
