Goat Cheese Apricot Almondine


Prep time: About 15 minutes
Cooking time: About 12 minutes

Makes: 75 servings




Directions -

  1. Spread almonds in baking sheet and toast 12 minutes in 300 deg.F oven. Cool and chop.
  2. Blend cheese and orange juice to make more spreadable.
  3. Mix in chopped almonds and spread on one side of each dried apricot.
  4. Serve in one layer in a baking pan, cheese-size up, so the apricots don't stick together.
