Fava Bean Spread

Ingredients
- 8 oz. canned fava beans (about 1 cup)
- 1/2 cup extra virgin olive oil
- 1 t. chopped garlic
- 1 juice from one lime
- 1/2 t. salt
Directions
- Drain beans.
- In a blender, puree beans, olive oil, lime juice, garlic and salt until smooth.
If you're using dried beans, boil 6 oz. of beans in water 1 hour.
Drain and cool the beans. Remove the skins (which took some time.)
Blend all ingredients as done above.
Good as a dip for chips or as a spread on bread, bagels, croissants, naan or pita.
