Egg Drop Corn Chowder

Cooking time: 15 minutes
Preparation time: 10 minutes

Makes: 3 servings



  1. stir corn starch into 1/2 cup of cold water until blended. Set aside
  2. Heat oil in 2 qt. soup pan
  3. Add garlic and ginger and simmer 1 minute with stirring.
  4. Add broth, heat to boil and simmer 5 minutes
  5. Add sweet corn and cornstarch mixture, stir a few times for 3 minutes
  6. Add soy sauce, turmeric and Cajun seasoning.
  7. Beat the eggs in a measuring cup with a pouring spout
  8. While stirring the simmering soup, slowly pour a thin stream of egg mixture into the soup
  9. Cook the eggs 2 minutes to set them
  10. Serve soup topped with Fritos and chopped scallions
