Chicken Romesco


Cooking time: 10 minutes
Preparation time: 10 minutes

Makes: 2 servings





  1. Cook pasta as per instructions. Drain.
  2. Flatten chicken breast and coat with flour.
  3. Heat oil in a skillet and fry chicken 5 minutes on each side.
  4. Add chopped mushrooms for the last 5 minutes.
  5. Remove and cut chicken into 1-inch pieces.
  6. Blend chicken, mushrooms, pasta and Romesco Sauce
  7. Serve, topped with Parmesan cheese.
