Cheesy Veggie Soup

Makes: 3 - 4 servings.
Ingredients
- 4 oz. finely chopped carrots
- 2 oz. finely chopped celery
- 2 oz. finely chopped yellow onion
- 1 T. olive oil
- 1 t. minced garlic
- 4 cups water
- 3 T. bouillon powder
- 4 oz. whole wheat penne (or other pasta)
- 2 oz. grated cheese
- 2 oz. finely chopped spinach or lettuce
- 1/2 cup cold water
- 2 t. corn starch
Directions
- Saute carrots, celery and onion in olive oil 5 minutes, with some stirring to make soffritto.
- Add garlic and saute 5 minutes more minutes, with some stirring.
- Mix corn starch in 1/2 cup cold water until blended and set aside.
- Boil 4 cups water. Add bouillon powder, soffritto and penne. Boil 5 minutes.
- Add chopped spinach/lettuce and grated cheese. Boil 5 minutes.
- Serve
