Cheesy Veggie Soup

Makes: 3 - 4 servings.

  1. Saute carrots, celery and onion in olive oil 5 minutes, with some stirring to make soffritto.
  2. Add garlic and saute 5 minutes more minutes, with some stirring.
  3. Mix corn starch in 1/2 cup cold water until blended and set aside.
  4. Boil 4 cups water. Add bouillon powder, soffritto and penne. Boil 5 minutes.
  5. Add chopped spinach/lettuce and grated cheese. Boil 5 minutes.
  6. Serve
