Makes: 2 servings
- 2 soft flour flour tortillas (10-inch)
- 2 oz. manchego cheese
- 1 cup ripe tomatoes, thinly sliced ( 2 medium)
- Using a cheese plane, slice enough cheese to cover one side of each tortilla.
- Top with sliced tomatoes.
- Broil about 5 minutes until cheese melts and tomatoes soften.
- Fold each tortilla in half and eat.
