Tomato Beef

Ingredients
- 6 oz. lean beef, thinly sliced
- 1 T. mild olive oil
- 1/2 green pepper, coarsely chopped
- 1/2 yellow onion, coarsely chopped
- 2 green onions, cut in 2-inch lengths
- 2 tomatoes, coarsely chopped
Marinade
- 1 t. corn starch
- 2 t. soy sauce
- 1 T. dry white wine
- 2 T. mild olive oil
Gravy
- 1 t. corn starch
- 1 t. soy sauce
- 1 T. tomato catsup
- 1/4 t. Worchestershire sauce
Directions
- Vigorously shake corn starch, wine and soy sauce in covered jar to remove lumps and dissolve corn starch. Add oil and shake. Pour into bowl and add beef. Marinade for 30 minutes or more.
- Mix ingredients for gravy in bowl.
- When meat is ready, cook in hot wok for 5 minutes. Remove to bowl with gravy.
- Clean wok, reheat, and add 1 T. olive oil. Stir fry green pepper 3 minutes. Add yellow onion and continue 2 more minutes. Add green onions and fry 2 minutes.
- Add meat and gravy to wok, add tomatoes, and stir fry 30 seconds. Serve over steamed rice.
