Split Pea Soup
Cooking time: 40 minutes
Preparation time: 10 minutesMakes: 6 servings
Ingredients
- 2 cups split peas
- 2 qts. water
- 1 carrot, chopped
- 1 yellow onion, chopped
- 1 celery stalk, chopped
- 1 bay leaf, minced
- 2 t. salt
- 1/4 t. black pepper
- 1/8 t. Cajun cayenne pepper seasoning
- 1/4 t. dried thyme, rubbed between your palms
Directions
- Pick over and rinse peas well. Add all ingredients, cover, and boil 20 minutes.
- Turn down heat and simmer 20 minutes more.
- Mash peas with potato masher.
