Salmon Quesadilla

Makes: 1 serving
Ingredients
- 2 9" soft flour tortillas
- 2 oz. canned salmon
- 2 T. chopped celery
- 2 T. chopped yellow onion
- 2 oz. cheese (swiss, manchego, etc.), thinly sliced
Directions -
- Top one tortilla with cheese.
- Top the other tortilla with salmon and vegetables.
- Broil tortillas 5 minutes.
- Lay cheese tortilla cheese-side down onto the salmon side.
- Fold in half and eat.
