Potato Salad with Salmon

Ingredients
- 8 oz. canned salmon
- 2 potatoes, cut into 1/4-inch slices.
- 1 green onion, minced.
- 8 mint leaves, minced.
- 2 t. mild olive oil
- 1 t. rice vinegar
- 1 t. mayonnaise (optional)
- 4 lettuce leaves.
- 4 slices of tomato.
- 8 slices of cucumber.
Directions
- Boil potatoes 12 minutes or until barely done. Drain.
- Mix warm potatoes with green onion, mint leaves, oil, vinegar, mayonnaise.
- Break salmon into smaller chunks and gently blend into mixture.
- Salt and pepper to taste.
- Serve over lettuce leaves and garnish with tomato and cucumber slices.
