Baked Salmon Florentine

Prep time: About 15 minutesMakes: 3-4 servings
Ingredients
- 1 lb. salmon fillets
- 10 oz. frozen spinach
- 1 T. mild olive oil
- 1/2 cup cilantro leaves
- 1/2 red onion, thinly sliced
- 1/4 t. cajun seasoning
Directions
- Cook spinach as per directions. Drain.
- Coat sides and bottom of 6x10" baking dish with olive oil.
- Layer onions, cilantro, cooked spinach, and finally salmon.
- Sprinkle seasoning over salmon and bake 25-30 minutes in 425 deg.F oven.
