Poached Cod with Broccoli and Pasta

Ingredients
Broth for Poaching
- 1/2 c. chicken broth (from 14 oz. can)
- 1/2 c. water
- 2 sprigs of cilantro
- 1/4 t. powdered ginger
- 1/4 t. salt
- 1 clove of garlic, mashed
- 2 black peppercorns
- 2 slices of lime
Broth for Serving
- 1 1/2 c. chicken broth (remainder of 14 oz. can)
- 1 t. mild olive oil
- 1/4 t. powdered ginger
- 1 clove of garlic, minced
Other ingredients
- 8 oz. cod fish, cut into 2" chunks
- 6 florets of broccoli (1/2 head)
- 4 oz. angel hair pasta
- 1 tomato, cut into wedges
- 6 sprigs of cilantro, destemmed and chopped
- 4 slices of lime (the rest of the lime)
- 2 green onions, chopped
Directions
- For the serving broth, heat olive oil in pan. Cook garlic and ginger 3 minutes.
- Add chicken broth and simmer 20 minutes, partially covered. Salt and pepper to taste.
- Meanwhile, put ingredients for poaching broth in skillet and boil.
- Add cod fish, cover, and simmer 7 minutes. Remove fish and discard broth.
- Steam broccoli 6-7 minutes. Drain.
- Cook angel hair pasta 5. Drain.
- Divide pasta onto two plates. Arrange broccoli florets and tomato wedges around the sides.
- Place pieces of cod on top, add lime wedges, scallions, and cilantro. Pour serving broth over the top and eat.
