Olive Chicken in Wine Sauce

Ingredients
- 6 chicken thighs
- 3 T. flour
- 1/2 t. salt
- 1/2 t. crumbled dry thyme
- 1 T. mild olive oil
- 1 cup dry white wine
- 1/4 cup dry sherry
- 1/2 t. minced green onion
- 2 oz. sliced ripe olives
- 2 oz. sliced pimentos
- 3 T. grated parmesan cheese
Directions
- Trim excess skin and fat from chicken. Wash and pat dry with paper towels.
- Mix salt, pepper, and thyme in a paper bag. Add two thighs and shake to coat. Repeat.
- Heat oil in heavy skillet. Brown chicken about 5 minutes on each side.
- Place chicken in casserole. Cover with wine, sherry, onions, olives, and pimentos.
Cover and bake 45 minutes at 375 deg.F.
- Uncover, sprinkle with cheese and bake 5 more minutes.
Good served with Parmesan Polenta.
