Mango Salsa
Prep time: About 15 minutes
Blending time: 30 minutes
Makes: 1 1/2 cups
Ingredients
- 1/4 cup lime juice ( from 2 limes )
- 1/4 cup dried mango, minced
- 1/4 cup yellow onion, chopped
- 1/4 cup tomato, chopped ( 1 roma tomato )
- 2 T. jalapeño peppers, minced
- 2 T. chopped parsley (or cilantro)
- 1 t. minced garlic ( 1 clove )
Directions
- Blend all ingredients and refrigerate 30 minutes.
- Good served with grilled meat or fish.
