Low-salt Tomato Sauce

Ingredients
- 1 T. mild olive oil
- 1/2 cup chopped onions
- 1/4 cup diced carrots
- 1/2 cup sliced mushrooms
- 1 clove garlic, minced
- 1 cup red wine
- 1 cup water
- 6 oz. can of tomato paste (no salt-added)
- 14 oz. can of diced tomatoes (no salt-added)
- 1/4 cup chopped parsley
- 1/4 t. basil
- 1/2 t. oregano
- 1/4 t. black pepper
- 1 bay leaf
Directions
- Saute onions, garlic, carrots, and mushrooms 10 minutes in oil at medium heat, stirring occasionally to avoid burning.
- Add remaining ingredients. Stir to blend. Simmer 30 minutes, stirring occasionally.
