Lemongrass Beef

Cooking time: About 5 minutes
Makes: 2 servings
Ingredients
- 1 T. minced lemongrass
- 1 T. minced green onions
- 1 T. Caramel Fish Sauce
- 1 t. soy sauce
- 6-8 oz. flank steak, sliced across the grain in 1/4" strips
- 1 T. mild olive oil
- 1/2 Granny Smith apple, cored, quartered, and thinly sliced
- 4 T. Chili Lime Sauce
- 1 T. chopped green onions
- 2 T. roasted peanuts, chopped
- 1/4 t. basil
Directions -
- Mix well in a bowl the lemongrass, minced green onions, caramel fish sauce, and soy sauce.
- Stir in the sliced beef and marinate 20 minutes.
- Oil a hot griddle and sear beef strips 2 minutes per side.
- Add beef, apple, chile lime sauce, basil, chopped green onions, and peanuts and stir.
- Serve with steamed rice.
