Jambalaya

Ingredients
- 1/2 lb. shrimp and/or sliced meat: ham, sausage, beef or chicken
- 1 T. mild olive oil
- 1 green pepper, chopped
- 1/2 cup chopped green onion
- 1/2 cup diced celery
- 1 cup uncooked rice
- 3 cups boiling water
- 1/2 t. salt
- 1/8 t. ground red pepper
- 1/8 t. ground black pepper
- 1/4 t. crumbled dry thyme
- 1 bay leaf
Directions
- Heat oil in wok or heavy pan. Brown meat.
- Stir in salt, pepper, and thyme and coat meat.
- Add rice and water. Cover. Simmer 10 minutes.
- Add celery, green onion, and bay leaf. Cover and simmer 10 more minutes.
