Hungarian Goulash
Prep time: About 15 minutes
Cooking time: About 1 1/4 hour
Makes: 4 servings
Ingredients
- 3 oz. chicken/apple sausage, sliced
- 3 oz. ham, in 1/2" cubes
- 1 t. mild olive oil
- 6 oz. lean beef, in 3/4" cubes
- 2 T. flour
- 1/4 t. salt
- 1/4 t. pepper
- 2 t. mild olive oil
- 1 green pepper, diced
- 1 yellow onion, thinly sliced
- 2 garlic cloves, minced
- 1 T. mild olive oil
- 1/2 c. carrots, chopped
- 1 1/2 t. paprika
- 1 t. marjorum
- 1 bay leaf
- 1 beef bouillon cube
- 1/2 t. caraway seeds
- 1/4 t. pepper
- 3 oz. tomato puree
- 1/3 c. dry sherry
- 1 1/2 c. water
Directions -
- Heat 1 t. oil in a wok or heavy skillet. Brown sausage and ham 5 minutes. Remove.
- Coat beef with a mixture of flour, salt and pepper.
- Add 2 t. olive oil to wok and heat. Cook beef 5 minutes in hot oil, turning to brown all sides. Set aside.
- Heat remaining 1 T. of olive oil in wok.
- Stir-fry green pepper, onions, and garlic 5 minutes.
- Add remaining ingredients. Cover and simmer 1 hour, stirring occasionally.
- Serve with boiled potatoes and sauerkraut. Top each serving with 1 T. sour cream.
