Frittata

Ingredients
- 1 potato, in 1/4" slices
- 1 T. mild olive oil
- 1/2 cup chopped yellow onion
- 4 mushrooms, sliced
- 2 green onions, chopped
- 1 tomato, chopped
- 2 eggs, beaten
- 1/2 cup egg substitute
- 4 oz. cooked meat (salmon, sausage, shrimp, chicken, etc.)
Directions
- Heat oil in heavy skillet or wok. Brown potatoes 2 minutes per side.
- Stir in yellow onions and mushrooms. Cover and steam 5 minutes.
- Add green onions and tomatoes and steam 2 minutes.
- Stir in eggs, egg substitute, and meat. Stir 5 minutes.
- Salt and pepper to taste.
