  1. Heat oil in heavy skillet or wok. Brown potatoes 2 minutes per side.
  2. Stir in yellow onions and mushrooms. Cover and steam 5 minutes.
  3. Add green onions and tomatoes and steam 2 minutes.
  4. Stir in eggs, egg substitute, and meat. Stir 5 minutes.
  5. Salt and pepper to taste.
