French Lentils


Cooking time: About 40 minutes
Prep time: About 10 minutes

Makes: 2 servings





  1. Clean and pick over lentils.
  2. Boil water. Add lentils, bay leaf, dried onion, garlic salt, and salt.
  3. Cover and simmer 35 minutes.
  4. Meanwhile heat olive oil in heavy lidded skillet or wok.
  5. Add sliced carrots. Fry 5 minutes, stirring occasionally. Cover and simmer 10 minutes to sweat moisture out of carrots.
  6. When lentils are done, serve and top with sweated carrots.

Recipe inspired by a dinner served 12/30/2002 at Chez Panisse Restaurant in Berkeley, California. Served there with grilled duck.
