French Lentils

Ingredients
- 1/2 cup lentils
- 1 cup boiling water
- 1 small bay leaf
- 1 T. dried onion
- 1/2 t. garlic salt
- 1/2 t. salt
- 1 t. mild olive oil
- 1/2 cup sliced carrots
Directions
- Clean and pick over lentils.
- Boil water. Add lentils, bay leaf, dried onion, garlic salt, and salt.
- Cover and simmer 35 minutes.
- Meanwhile heat olive oil in heavy lidded skillet or wok.
- Add sliced carrots. Fry 5 minutes, stirring occasionally. Cover and simmer 10 minutes to sweat moisture out of carrots.
- When lentils are done, serve and top with sweated carrots.
