Fajita Stir-fry


Cooking time: About 15 minutes
Prep time: About 1 hour

Makes: 2 servings





  1. Stir beef with 1/4 t. chili powder and marinate an hour, stirring occasionally.
  2. Heat oil in a wok and stir-fry all vegetables (except green onions) for 5 minutes.
  3. Add green onions and 1/4 t. chili powder and stir-fry another 5 minutes. Remove to bowl.
  4. Reheat wok and stir-fry beef 5 minutes. Remove to second bowl.
  5. Serve over rice or wrapped in tortillas.
  6. Add taco sauce to taste.
