Chicken Stew with Lemon

Ingredients
- 9 - 12 oz. chicken pieces (skinless breast, thighs, etc.)
- 4 T. flour
- 1/2 t. black pepper or Cajun seasoning
- 2 T. mild olive oil
- 4 mushrooms, sliced (optional)
- 1 cup yellow onion, chopped
- 1 cup sliced carrots
- 1 large potato, diced
- 1/2 t. dried dill
- 2 cloves
- 1/2 t. crumbled dry thyme
- 1 t. celery salt
- 2 T. dry sherry
- 1/2 cup dry white wine
- 1/2 cup water
- 4 T. lemon juice
Directions
- Mix flour and Cajun seasoning in a bag. Add chicken and shake to coat with flour.
- Heat olive oil in skillet. Brown chicken about 5 minutes on one side.
- Turn chicken. Add carrots, onions (and optional mushrooms) around chicken and brown another 5 minutes.
- Add all other ingredients except for lemon juice and water. Cook covered 10 minutes.
- Add lemon juice, wine and water. Cover, and simmer another 10 minutes.
