Cajun Egg Wrap

Cooking time: About 20 minutes
Makes: 2 servings
Ingredients
- 1 T. mild olive oil
- 1/2 yellow onion, chopped
- 4 oz. ham, in 1/2" cubes
- 2 eggs, beaten
- 1/2 c. egg substitute
- 1 T. grated parmesan cheese
- 1/4 c. milk
- 1/2 t. Cajun red pepper seasoning
- 2 green onions, chopped
- 2 10 inch flour tortillas
Directions -
- Heat oil in a wok or heavy skillet. Saute yellow onions 10 minutes.
- Add ham and saute 5 minutes.
- Mix remaining ingredients except for tortillas. Add to onions and cook 5 minutes, stirring.
- Divide mixture and serve on tortillas. Wrap and eat.
