Cajun Crockpot Stew

Ingredients
- 1 lb. lean round steak
- 2 T. flour
- 3 T. mild olive oil
- 2 stalks celery, sliced
- 2 carrots, sliced
- 1/2 green pepper, sliced
- 1/2 yellow onion, chopped
- 1 clove garlic, minced
- 6 mushrooms, quartered
- 2 white potatoes, cubed
- 1 bay leaf
- 1 t. Cajun blackened seasoning
- 1 t. Worchestershire sauce
- 1/2 c. dry red wine
- 1 bottle of beer (12 oz.)
Directions
- Cut beef into 1-inch cubes. Roll in flour. Fry cubes in 2 T. olive oil about 10 minutes in a skillet or wok, turning occasionally to brown all sides. Drain and place in 3-quart crockpot.
- Reheat wok and add remaining 1 T. olive oil. Saute all vegetables except potatoes for 10 minutes.
- Add sauteed vegetables and potatoes to crockpot. Pour in seasonings, wine, and beer. Stir.
- Cover crockpot and cook 1 hour at high setting. Stir and cook another 3 hours at low setting. Stir and cook at low setting another 3 hours.
You can leave this crockpot cooking all day at the low setting if you only cook 30 minutes at the higher setting.
