Bolognese Meat Sauce

Ingredients
- 24 oz. lean ground beef
- 1 cup chopped baby carrots
- 1 celery stalk, chopped
- 1/2 yellow onion, minced
- 1 clove garlic, minced
- 3 T. olive oil
- 2 T. tomato ketchup
- 1/2 cup chicken broth
- 1 cup dry white wine
- 1 1/2 cup milk
Directions
- Heat olive oil in a wok or heavy skillet.
- Add carrots, celery and onion. Stir-fry 5 minutes.
- Add ground beef and garlic, and stir-fry 5 minutes, separating meat with a spatula.
- Stir in broth, wine and ketchup. Cover and simmer 30 minutes.
- Stir in 1/2 cup milk. Cover and simmer 30 minutes.
- Stir in 1/2 cup milk. Cover and simmer 30 minutes.
- Stir remaining 1/2 cup milk, cover and simmer 30 minutes
The sauce can be frozen (1/2 cup per serving) and used in omelets, spaghetti, lasagna, or tacos.
