Bolognese Meat Sauce

Makes: about 24 oz. (enough for 6 - 8 servings)

  1. Heat olive oil in a wok or heavy skillet.
  2. Add carrots, celery and onion. Stir-fry 5 minutes.
  3. Add ground beef and garlic, and stir-fry 5 minutes, separating meat with a spatula.
  4. Stir in broth, wine and ketchup. Cover and simmer 30 minutes.
  5. Stir in 1/2 cup milk. Cover and simmer 30 minutes.
  6. Stir in 1/2 cup milk. Cover and simmer 30 minutes.
  7. Stir remaining 1/2 cup milk, cover and simmer 30 minutes

The sauce can be frozen (1/2 cup per serving) and used in omelets, spaghetti, lasagna, or tacos.
