Beef Stew with Beer


Prep time: About 15 minutes
Cooking time: About 1 hour

Makes: 2 servings




Directions -

  1. Coat beef with a mixture of 2 T. flour and 1/4 t. cajun seasoning.
  2. Heat 1 T. olive oil in wok (or heavy skillet). Add beef to hot oil, turning to brown all sides. Set aside.
  3. Clean wok and heat remaining 1 T. of olive oil.
  4. Stir-fry celery, onions, mushrooms, and carrots 10 minutes.
  5. Add potatoes, beer, bouillon, and remaining 1/4 t. cajun seasoning.
  6. Cover and Simmer 40 minutes or until potatoes are cooked.
  7. Put 1 T. flour and 1/4 cup cold water in tightly lidded jar and shake vigorously.
  8. Add beef, oregano, and thyme to stew.
  9. Stir flour mixture into stew and simmer 5 minutes. Add water if too thick.
