Avgolemono (Egg-Lemon) Soup
Cooking time: 20 minutes
Preparation time: 5 minutes
Makes: 2 - 3 servings
- 2 1/2 cups chicken broth
- 1/4 cup basmati rice
- 2 eggs
- 1 lemon, squeezed
- Boil broth. Add rice, cover, and simmer 20 minutes.
- Beat eggs in mixing bowl and, while beating, slowly add in lemon juice.
- While still beating, add 2/3 cup of hot chicken broth.
- Pour this mixture back into remaining broth and rice, mix, and serve.
