Avgolemono (Egg-Lemon) Soup


Cooking time: 20 minutes
Preparation time: 5 minutes

Makes: 2 - 3 servings





  1. Boil broth. Add rice, cover, and simmer 20 minutes.

  2. Beat eggs in mixing bowl and, while beating, slowly add in lemon juice.

  3. While still beating, add 2/3 cup of hot chicken broth.

  4. Pour this mixture back into remaining broth and rice, mix, and serve.
