Stir-fried Chicken with Asparagus


Cooking time: About 12 minutes
Prep time: About 30 minutes

Makes: 2 servings





  1. Slice chicken into 3/8-inch thick slices. Cut slices into bite-sized pieces.
  2. Mix chicken with 1 T. of soy sauce and 1 T. wine. Marinate 1/2 - 1 hour.
  3. Mix 2 t. of flour, 1 t. soy sauce, and 2 t. COLD water as a sauce.
  4. Heat 2 t. olive oil in hot wok. Add chicken and marindae. Cook 2 minutes.
  5. Turn chicken pieces and cook 2 more minutes.
  6. Cut thickest piece to make sure all pink is gone. (If not, cook another minute and retest.)
  7. Remove chicken and clean wok.
  8. Reheat wok and add 2 t. olive oil. Stir-fry onions and asparagus 3 minutes.
  9. Add 1/2 cup water, cover wok, and steam vegetables 3 minutes.
  10. Uncover, add chicken, sauce, and tomatoes. Stir-fry 1 minute. Add water if too thick.
  11. Serve over steamed rice.
