Stir-fried Chicken with Asparagus

Ingredients
- 6 oz. lean boneless chicken breast
- 8 oz. asparagus, cut into 2-inch segments
- 1/2 cup. chopped yellow onion
- 1/4 cup. chopped tomato
- 4 t. mild olive oil
Marinade
- 1 T. soy sauce
- 1 T. dry sherry or rice wine
Sauce
- 2 t. flour
- 1 t. soy sauce
- 2 t. water
Directions
- Slice chicken into 3/8-inch thick slices. Cut slices into bite-sized pieces.
- Mix chicken with 1 T. of soy sauce and 1 T. wine. Marinate 1/2 - 1 hour.
- Mix 2 t. of flour, 1 t. soy sauce, and 2 t. COLD water as a sauce.
- Heat 2 t. olive oil in hot wok. Add chicken and marindae. Cook 2 minutes.
- Turn chicken pieces and cook 2 more minutes.
- Cut thickest piece to make sure all pink is gone. (If not, cook another minute and retest.)
- Remove chicken and clean wok.
- Reheat wok and add 2 t. olive oil. Stir-fry onions and asparagus 3 minutes.
- Add 1/2 cup water, cover wok, and steam vegetables 3 minutes.
- Uncover, add chicken, sauce, and tomatoes. Stir-fry 1 minute. Add water if too thick.
- Serve over steamed rice.
