Stir-fried Chicken with Apple and Peppers

Ingredients
- 6 oz. lean boneless chicken breast, thinly sliced
- 1/2 red bell pepper, chopped into 1 inch pieces
- 1 apple, peeled and cut into 1/2 inch pieces
- 2 green onions, ends trimmed, cut into 2" strips
- 1 T. mild olive oil
Marinade
- 1 t. soy sauce
- 1 t. dry sherry or rice wine
- 1 t. mild olive oil
Sauce
- 2 t. corn starch
- 1 t. soy sauce
- 1/2 c. cold chicken broth
Directions
- Mix 1 t. each of soy sauce, wine and olive oil. Marinate chicken in it 1/2 - 1 hour.
- Mix 1 t. of soy sauce, corn starch, and COLD chicken broth as a sauce. (If the broth is hot the corn starch will be lumpy.)
- Put 1 T. olive oil in hot wok. Add red peppers and apples. Cook 3-4 minutes.
- Remove from wok and clean wok.
- Reheat wok and add chicken with its marinade. Stir fry 3-4 minutes. Add cooked peppers and apple, and the green onions. Cook one minute.
- Add sauce and cook 1 minute, stirring constantly to mix.
- Serve over steamed rice.
