Tuna Rigatoni

Ingredients
- 2 T. olive oil
- 1/2 cup chopped mushrooms
- 1/2 cup chopped onions
- 1/4 cup chopped green bell peppers
- 14 oz. can of diced tomatoes
- 8 oz. can of tomato sauce
- 1 t. dried oregano
- 1 t. dried thyme
- 1 bay leaf
- 7 oz. canned tuna (in water)
Directions
- Heat oil in a soup pan.
- Add mushrooms, green peppers and onions and saute 10 minutes
- Add herbs, diced tomatoes and tomato sauce. Simmer 40 minutes. Stir occasionally.
- Mix in tuna (along with canning water), stir and heat 10 minutes.
- Serve over rigatoni and top with grated parmesan cheese.
I like to use whole wheat rigatoni.
