Sweet Potato Lentil Stew

Ingredients
- 1 cup dried red lentils, rinsed
- 3 cups peeled and diced red sweet potato (1 large one)
- 2 cups low sodium broth
- 2 cups water
- 1/2 cup chopped yellow onion
- 4 t. Thai red curry paste
- 1/2 t. garam masala
- 1/2 t. turmeric
- 1 1/2 t. ground ginger
- 1/2 t. salt
- 1/2 T. minced garlic
- 6 oz. can of tomato paste
- 1/2 cup coconut milk
Directions
- Mix all but coconut milk in a slow cooker or Crock Pot.
- Cook for 2 1/2 - 3 hours at high heat or 6 - 7 hours on low
- When finished the lentils and sweet potato should be soft. Blend in coconut milk and serve.
Good served with chopped cilantro as a vegetarian entree over rice or cooked noodles.
Thin with more water/broth and use as a dip for chips.
Also good as a side dish.
