Makes: 3 - 4 servings
Ingredients
- 2 cups finely chopped carrots (about 8 oz)
- 1 cup finely chopped onions (about 4 oz)
- 1 cup finely chopped celery or broccoli (about 4 oz)
- 4 T. extra virgin olive oil
- 2 t. chopped garlic
Directions
- Heat olive oil in a skillet.
- Add carrots, onions and celery and slow fry 15 minutes, stirring occasionally.
- Add garlic and stir fry 2 more minutes.
Good added to pasta sauce or used plain with cooked pasta and olive oil. Also good over fried eggs.
